Seduce with sweetness: summer fruit roll delight

Valentine’s Day is just around the corner, and what better way to celebrate love than with a dessert that’s as sweet as the occasion itself? This year, skip the traditional chocolates and flowers and opt for something light, refreshing, and filled with the vibrant colours of romance. This Summer Fruit Roll by Jenny Morris is the perfect treat to add a burst of flavour to your Valentine’s Day celebration. This delightful roll is not only delicious but also incredibly easy to make, ensuring that you and your special someone can enjoy a sweet moment together.

Ingredients

• 4 medium sized nectarines pitted and quartered
• 6 large plums pitted and quartered
• 1/2 cup sugar
• Ground cinnamon
• Ground cloves
• 1/ 4 teaspoon ground cardamom
• 1/2 teaspoon ground ginger
• Juice of 1 lemon
• 40g butter
• 1 1/2 rolls of frozen puff pastry thawed

Method

Pre Heat Oven to 180C
Start by preparing the fruit.
1. In a large frying pan place the fruit, sprinkle over the sugar, spices, lemon juice and butter
2. On a medium heat cook till the juice start to oize our if the fruit.

3. Remove from the stove and cool completely.

4. Spray an oven tray with non stick cooking spray .
5. Place the full roll of puff pastry on a lightly floured work surface. Roll lightly with a rolling pin into a rectangle.

6. If you are using the cream cheese place onto the base of the pastry lengthwise and arrange the fruit on top of it.
7. Fold the edges over the fruit, press the edges together to seal.
8. Brush with beaten egg.

9. Slice the half roll of pastry into strips and arrange over the egg washed pastry. Brush with beaten egg.

10. Bake in the preheated oven until golden brown, 30 to 35 minutes.

11. Dust with icing sugar and serve with fresh cream.

200g cream cheese
1 egg
Mix together and spread onto the base of the pastry
