Korean Lamb chops served with a Peach slaw

Serves 4

2 lamb loin chops Ingredients
3 teaspoons gochujang paste
3 tablespoon rice wine vinegar
3 teaspoons brown sugar
2 tablespoons dark soy sauce
3 tablespoons peach juice
4 teaspoons grated ginger
4 cloves garlic crushed
3 teaspoons sesame oil
Vegetable oil
Garnish
2 teaspoons toasted mixed white and black sesame seeds
2 spring onions with tops thinly sliced

 

Method

1. In a bowl add the gochujang paste, rice wine vinegar, sugar, soy sauce, peach juice, ginger, garlic, and sesame oil.
2. Mix, together, then add the lamb chops and coat in the marinade. Cover the bowl with plastic wrap and chill for 30 minutes.
3. Heat a little oil in a frying pan and fry the chops to your liking

Peach Slaw
• 1 cup chopped peaches
• 1 cup shredded Green cabbage
• 1 cup shredded Red cabbage
1 small yellow pepper julienned
1 small red pepper julienned
• 2 ribs Celery thinly sliced
• 3 Spring onions with tops thinly sliced
• 1 large Julienned carrot
• 3 cling peaches finely diced
• 1/ 2 cup freshly chopped coriander
• 1/4 cup freshly chopped fresh mint
• 3/4 cup Mayonnaise
• Honey to taste
• 1 tablespoon freshly grated Ginger
• 2 cloves finely crushed Garlic
• Salt and pepper to taste

Method

Stir all the ingredients together just before serving taste and adjust seasoning ,
