Bread and Cheese Balls

Makes approximately 20 to 24 balls

Ingredients

• 300 grams of grated mozzarella cheese

• 100g cheddar cheese

• 1 tablespoon finely chopped red onion

• 1 cup fresh breadcrumbs

• 3 tablespoons corn flour

• 1 teaspoon grated garlic

• 2 tablespoons chopped parsley

• 1 teaspoon chopped fresh thyme leaves

• 1 teaspoon ground cumin

• 1 chilli finely chopped

• 1 extra large egg beaten

• Salt and pepper to taste
• Oil for deep frying

Crumbing Mixture

3/4 cup flour

1 egg beaten

1 cup bread crumbs

Method
Dust the cheese balls in flour, dip into the beaten egg and then, into the crumbs.

Place into the fridge until firm and you are ready to fry them
.

Method

1. Place all the ingredients except the oil into a bowl and mix together well.

2. Roll the mixture into equal sized balls, crumb, and chill until firm.

3. In a saucepan, heat the oil over a medium heat.

4. When the oil is hot, fry the cheese balls until golden and crisp.

5. Drain on paper towel and serve while hot and crisp with a dip or drizzel of your choice.

Courgette Loaf topped with a lemon drizzle

Makes 1 loaf
Ingredients:
• 1 1/2 cups cake flour
• 1 teaspoon baking powder
• 1/2 teaspoon bicarbonate of soda
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon salt
• 2 large eggs
• 1/2 cup plain Greek yogurt
• 1/3 cup honey
• 1/4 cup olive oil
• 1 teaspoon vanilla extract
• 1 1/2 cups grated courgettes
• 1/2 cup sultanas or raisins

- Method
Preheat your oven 175°C
1. Line a 1 kg loaf pan with grease-proof paper and give the pan a light spray nonstick cooking spray.

1. In a large bowl mix together the the flour, baking powder, bicarbonate of soda and salt, stir in the spices.

1. In a separate bowl, whisk together the yogurt, honey, oil, vanilla, and eggs until smooth, stir in the courgettes, don't over mix it will result in a heavy texture.

2. Gently fold in the sultanas

3. Spoon the batter into the prepared loaf pan and bake for 45-50 minutes, or until a skewer inserted into the centre comes out clean.
4. Let the loaf rest in the pan for 10 minutes, turn out onto a wire cooling rack and cool.

5. Once the loaf has cooled, drizzle with lemon drizzle.

Lemon Drizzle
Ingredients

• 1 cup sifted sugar
• 2 to 3 tablespoons fresh lemon juice
Stir together in a clean bowl, adjust the consistency to suit your needs

Nectarine and Almond Crumble

Makes 6 servings

Ingredients

The Filling
250g cream cheese whipped together with 4 tablespoons of honey
800 g slice nectarines
3 tablespoons brown sugar
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3 tablespoons melted butter

Method
Pre heat oven to 180 deg C

1. Generously butter an ovenproof dish large enough to fit the nectarines tightly.

2. Spread the honey whipped cream cheese onto the

base of the baking dish.
3. Arrange the nectarines into the dish.

4. Mix together the brown sugar and spices and sprinkle over the nectarines spoon over the melted butter.

The Crumble

• 120 g flour

• 100g almond flour

• 150 g butter

• 60 g roughy chopped toasted almonds

• 80 g sugar

• 1/2 teaspoon ground cinnamon

• 3/4 teaspoon ground cardamom

Method

1. In a bowl, add all the dry ingredients and stir together well.

2. Add the butter and mix into the flour using your fingertips to form a rough crumble.

3. Top the nectarines evenly with the crumble.

4. Bake for 25 to 30 minutes or until golden and bubbling.

Delicious served warm or cold with a generous scoop of vanilla ice cream.
