Ingredients
• 1 roll puff pastry
• 50g brown sugar
• 2 teaspoons ground cinnamon
• 3 tablespoons butter
• beaten egg yolk to glaze
• Extra brown sugar for sprinkling

Method
Preheat the oven to 200 deg C.

1. Unwrap the pastry and place it down onto a lightly floured surface and cut into 4 even strips.
2. Mix the cinnamon and sugar together in a bowl.Divide the butter between the 4 strips of pastry and spread evenly over the pastry.
3. Sprinkle the sugar and cinnamon mixture over the pastry and then fold each strip of pastry in half and press firmly down.
4. With a sharp knife cut 7 to 8 strips almost to the top of the pastry,make sure to leave a centimeter strip at the top.
5. Twist each strip all the way up, now using the uncut end roll the pastry up into a neat roll.
6. Place the roll down onto a baking tray with the loose end on the base.
7. Brush with beaten egg, sprinkle with brown sugar and bake for 25 to 35 minutes or until crisp and golden.

Salmon Terrine

Makes for a delicious starter served with whole wheat bread or toasted ciabatta.
Serves 4 to 6

Ingredients

1 x medium loaf tin
1 large cucumber shaved into long strips

The Filling

15 ml powdered gelatin

200 g smoked salmon chopped

2 spring onions chopped

1 tablespoon lemon zest

1 tablespoon lemon juice

300g cream cheese

120 ml Greek yogurt

1 tablespoons dijon mustard

2 tablespoon capers chopped

1 medium gherkin finely chopped

Handful dill chopped

1 tablespoon finely chopped lemon zest

1 clove finely grated garlic

Salt and pepper to taste

Method

Soak the gelatine in a little bit of water in a small bowl until softened.

1. Now line a 450g loaf pan with plastic wrap, make sure the plastic overhangs as you need it to cover the terrine once it is assembled
2. .
Line the pan with the sliced cucumber, laying the slices widthways across the base and up the sides and leaving enough hanging over the edge to fold over the top of the filling.

3. Make the filling by stirring together the filling ingredients, taste and adjust the seasoning to your liking.

4. Spoon the filling into the prepared tin,flip the over hanging cucumber over the filling and smooth down.

5. Chill for 5 hours, or better still over night
