Elegant enough for a luncheon, cheeky enough for drinks, and easy enough to make you feel like a culinary genius. Creamy, smoky, bright with lemon and lifted generously with fresh dill — exactly how we like things. Serves 6 to 8 as a starter IngredientsFor the Base 200 grams Salty Cracks biscuits 75 grams butter, melted 2 tablespoons finely chopped fresh chives Freshly ground black pepperFor the Filling 250 grams cream cheese, softened 300 grams smoked trout, finely chopped 15 ml fresh lemon juice 15 ml good-quality mayonnaise1 teaspoon finely grated lemon zest1 tablespoon finely chopped capers, well drained2 tablespoons finely chopped fresh dill2 spring onions, very finely sliced1 small clove garlic, very finely gratedFreshly ground black pepper to tasteFor Garnish 100g smoked trout, softly folded Extra chopped fresh dill Chopped chives A little extra lemon zestFreshly ground black pepperEquipment One 18cm springform dish Method1. Make the Base Place the Salty Cracks into a food processor and blend until fine crumbs form.Add the melted butter, chopped chives and a generous grind of black pepper.Pulse until the mixture resembles damp sand and holds when pressed.Press firmly into the springform tin to form an even, compact base.Refrigerate for 20 to 30 minutes to firm up. 2. Prepare the Filling Finely chop the 300 grams smoked trout.In a bowl, combine: Cream cheese Chopped smoked salmon MayonnaiseLemon juiceLemon zestCapersChopped dillSpring onionsGarlicMix until smooth, creamy and lightly textured — flecked with green herbs and capers.Taste and season with black pepper. The salmon and capers provide enough saltiness.3. Assemble Spoon the filling over the chilled base and smooth the top.Cover and refrigerate for at least 3 hours, or until firm and set.4. Finish & Garnish Release from the springform tin and neaten the edges if needed.Top generously with softly folded smoked trout.Finish with a generous sprinkle of fresh chopped dill, chopped chives, a little extra lemon zest and a final grind of black pepper.

Perfect for lunch, a light supper, or part of a glamorous grazing table. Serves Four as a light meal or six as a starterIngredientsFor the Salad300g smoked trout4 ripe but firm plums, sliced into wedges1 small fennel bulb, very thinly sliced (use a sharp knife or mandoline)1 small red onion, paper-thin slices2 generous handfuls rocket leaves2 generous handfuls baby spinach leaves1/2 a cup toasted almonds or pecans, roughly chopped1 tablespoon fresh dill, chopped1 tablespoon fresh parsley, choppedmicro herbs to garnishFor the Dressing3 Tablespoons extra virgin olive oil1 tablespoon fresh lemon juice1 tablespoon white wine vinegar1 teaspoon Dijon mustard1 teaspoon runny honey Salt to tasteFreshly ground black pepper to tasteMethodMake the dressing first. In a small bowl, whisk together the olive oil, lemon juice, vinegar, Dijon mustard, and honey until silky and emulsified.Season lightly with salt and pepper.Taste — it should be bright, slightly sweet, and zesty.Prepare the base.Arrange the rocket and spinach on a large platter rather than tossing in a bowl. This keeps everything looking abundant and beautiful.Layer the flavours. Scatter over the sliced fennel, red onion, and plum wedges so the colours are evenly distributed.Add the trout gently. Lay the smoked trout over the salad.Sprinkle over the toasted nuts and fresh herbs.Dress just before serving.Spoon the dressing lightly over the salad. Do not drown it — this salad likes a light touch.Final flourish. Add an extra crack of black pepper and, if you like, a last squeeze of lemon to wake everything up. And a scattering of micro herbs.
