Ingredients
2 cups sugar
2 eggs
1 cup sunflower oil
1 cup Buttermilk
1/2 cups sifted cake flour
1/2 cup cocoa powder
1 teaspoon white vinegar
1/2 cup very strong black coffee
2 teaspoons vanilla extract
5 ml Baking powder
5ml Bi carb
Method
Preheat oven 170 deg C
- Lightly spray a 23 cm bundt tin
- Place the sugar, eggs and oil into the bowl of your food processor and whip together till light and fluffy.
- Add the buttermilk and mix to incorporate
- Add the flour cocoa, vinegar coffee, vanilla, baking powder and bicarbonate of soda, do not over mix.
- Spoon the batter into the prepared cake tin.
- Bake for 30 minutes or until a skewer inserted into the centre comes out clean.
- Cool the cake before removing from the tin
Spoon over the ganache and decorate with berries or chocolate curls.
