Your New Favourite Spinach and Feta Pie

Spinach and feta pie Ingredients

• 4 cups cooked spinach chopped
• 300g crumbled feta cheese
• 3/4 cup chopped spring onions
• 1 medium red onion finely chopped
• 2 teaspoons dried dill
• 3 cloves grated garlic
• 3 eggs beaten
• 3/4 teaspoon ground black pepper
• 150 g Melted Butter
• 6 filo sheets
• Sesame seeds to garnish the spinach roll

Method
1. Preheat the oven to 190 deg C
2. Line a baking sheet with parchment paper and spray lightly with non stick cooking spray
3. Place the spinach feta, spring onions, red onions, dill, garlic, eggs and pepper into a large mixing bowl and mix together.
4. Brush each sheet of filo pastry with the melted butter and stack them one on top of each other.
5. Make a sausage shape with the spinach, leave about a 5 cm border around the pastry.
6. Place the mixture in the centre of the pastry
7. Fold the long border over the filling, fold in the ends and then gently roll up the dough.
8. Brush the top with melted butter and sprinkle with sesame seeds.
9. Bake for 30 to 35 minutes or until golden and crisp.
Serve with a large mixed green salad.
