Chocolate Cherry Ganache Topped CakeDramatic. Downright dangerous.This is not a cake for the faint of heart, it’s for when you want to impress, seduce, or silence a room with one glossy, glorious slice.Think: dark, coffee-laced sponge, juicy bursts of cherry, and a silky ganache so lush it should come with a warning label.It’s the kind of cake that whispers “treat yourself”. And then yells it. Serve it bare and bold, or crown it with fresh cherries and edible flowers. either way, it steals the spotlight my Darlinks.Chocolate Ganache CakeMakes: 1 double-layer cake (20 cm)Oven: Preheat to 175°CCake Ingredients• 280 grams caster sugar• 3 large eggs• 250 grams all-purpose flour• 2 teaspoons bicarbonate of soda• 1 teaspoon baking powder• ½ teaspoon salt • 200 mi hot strong ciffee • 50 grams cocoa powder • • 2 teaspoons vanilla extract • 250 ml butter milk • • 100 ml sunflower oil • • 1½ teaspoons vinegar • 2 cups fresh cherries, pitted and halved • 1 tablespoon flour or cocoa powder (for tossing cherries)Ganache200 grams dark chocolate, finely chopped200 ml fresh cream1 tablespoon butter (for shine)Optional: 1 tablespoon kirsch, cherry brandy,GarnishExtra fresh cherries (whole or halved, some with stems)Chocolate curls or flakesEdible flowers (optional, for theatre)A dusting of icing sugar-Method1. Prep your tins: Grease and line two 20 cm round cake tins with baking paper. Or use a bundt tin, I love the my Nordic Ware Bundt tin.2. Whisk your base:In a large bowl, beat the eggs and sugar until pale, thick, and fluffy.3. Sift the dry team: In another bowl, sift together the flour, bicarbonate of soda, baking powder, and salt.4. Make your cocoa potion:Stir the hot water, cocoa powder, and coffee granules until smooth and dark. Add vanilla, milk, and oil.5. Now Bring it all together: Add the dry ingredients and cocoa mixture to the egg mixture, alternating between wet and dry until fully incorporated and glossy.6. Vinegar magic:Stir in the vinegar. it gives lift and a tender crumb.7. Cherry charm:Toss the pitted cherries in a little flour or cocoa powder (this stops them sinking).Gently fold them through the batter, keeping a few to press on top for show8. Bake it beautiful:Divide the batter evenly between the tins.Bake for 30–35 minutes, or until a skewer comes out clean.Cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.Make the Ganache1. Heat the cream gently until just below boiling.2. Pour over the chopped chocolate, leave for 2 minutes, then stir until smooth and glossy.3. Stir in butter and your optional splash of kirsch or espresso for extra seduction.4. Cool until thickened but still spreadable.To Assemble1. Place one cake layer on a stand.Spread a generous layer of ganache over the top.2. Sandwich with the second layer, then pour or spread more ganache over the entire cake, letting it drip with intent.3. Decorate with fresh cherries, chocolate curls, and edible flowers.4. Dust with icing sugar just before serving for that final ta-dah moment.Serve With A glass of cherrystained Shiraz, Merlot, or even a ruby port, something bold enough to stand up to the chocolate but sweet enough to flatter the fruit.

Roasted Butternut and Falafel Green Goodness SaladIngredients• 3 cups roasted cubed butternut • Greenfields falafel (12 pieces deep fried• 1 can chickpeas, drained and rinsed • ½ red onion, finely sliced • 3–4 cups baby spinach • 150 grams feta, crumbled • 4 small spring onions, sliced •Method1. Base: Lay the baby spinach on a serving platter.2. Layer: Scatter over the roasted cubed butternut, chickpeas, red onion and spring onions.3. Add falafel: Place the warm falafel whole or halved4. Finish: Top with crumbled feta5. Dress: Drizzle generously with the creamy mint–coriander dressing and serve.Creamy Mint–Coriander DressingIngredients • 100 grams cream cheese • 100 grams Greek yoghurt • ½ cup fresh mint leaves • ½ cup fresh coriander leaves • • 2 garlic cloves, grated • ½ teaspoon chilli flakes • 1½ teaspoons honey or to taste1 • ½ teaspoon saltBlack pepper to taste1–2 tablespoons cold water (to loosen)Method • • • • Blitz everything until smooth, then adjust seasoning and thin slightly with water if needed
