Kid-friendly meals to surprise mom on Mother’s Day

In The Cooks Playground this week, Jenny Morris whips up some easy meals perfect for a stress-free Mother’s Day. These recipe are so easy, that kids (and hubbies) can get involved without leaving a disaster in the kitchen. Baked Ice-cream topped with Greek Yoghurt and Fresh Berries

SERVES 4

 

Ingredients

4 egg yolks

3 cups melted vanilla icecream

Thick Greek  Yoghurt  ir whipped cream

Mixed berries for topping

Honey for drizzling ..optional

Icing sugar for dusting

 

Method

Preheat oven to 150 deg C

Spray 4 oven proof ramekins with non stick cooking spray.

Whisk together the egg yolks and icecream.

Divide the mixture between the ramekins.

Place the ramekins into an oven proof dish and pour hot water half way up the ramekins

 

Bake for 35 minutes… cool and chill till you are ready to top with yoghurt or whipped cream and berries.

Dust with icing sugar and serve.

 

 

Roast Lemon and Herb Chicken Breasts

SERVES 4

 

Ingredients

4 plump chicken breasts on the bone with skin on

Handful fresh rosemary

Handful fresh thyme

2 medium yellow lemons

Olive oil

Salt and pepper to taste

Any other spice you might like to add.

 

Method

Place the breasts in an oven proof dish skin side

Squeeze  the lemons ivervtge chicken, season with salt and pepper and tuck the the herbs between the breasts.

Bake for 35  to 40 minutes till golden and cooked through.

The juices should run clear.

 

Serve with lots of veggies and crispy roast potatoes.
