Makes 12 to 15 cookies

Ingredients:
130g butter softened
1/2 cup brown sugar
1/4 cup white sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 cup cake flour
1 cup rolled oats
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
1 1/2 cups chocolate chips
3/4 cup cornflakes
3/4 cup shredded coconut flakes
1/2 cup toasted chopped pecans
3 medium plums cut into small blocks
Melted choclate for dipping

Method Preheat the oven to 180 deg C
Line a baking sheet with grease proof paper and set aside. In the bowl cream the butter, brown sugar, white sugar, egg, and vanilla extract and beat until light and fluffy.

Add flour, rolled oats, baking soda, and salt and beat again until combined.
Fold in chocolate chips, cornflakes, coconut flakes, and pecans and plums, now use an icecream scoop to scoop dough onto the prepared baking sheet.

Cover and chill in the fridge for at least 2 hours. preheat the oven to 180deg C and bake for 12 minutes
Cool on the baking tray

Tip. You can dip the cookies chocolate if you like
